It's no secret that Sidecar Coffee Roasters is moving to the old Wonder Bread Building in Waterloo. The outpouring of support for the entire project (I'm only a tiny piece of the project) has been tremendous and everyone involved thanks you for your encouragement over the last several months.
But to make it official, I thought I'd give a little recap of what you can expect out of us in 2016.
First, a little backstory
December 2012. Sidecar Coffee Roasters had been open for about a month, and at the end of the year (I was shutting down for a week) I had three or four 12 oz bags of coffee left. Single Speed had also just opened, so I stopped in and dropped a bag off for the owner (we'd not yet met). A few days later there was a challenge in the form of a tweet to collaborate on a coffee beer. A few weeks later Dave and I sat at a table in the front window of the tap-room. With gram scale and teaspoon in hand, we dosed and re-dosed various strengths and blends of cold brewed coffee into Single Speed's brown ale. The rest, as they say, is history!
Fast-forward to 2015. We'd been doing awesome coffee beer collaborations for a few years and then one day Dave asked me to check out a building in Waterloo with him. Soon thereafter (not soon enough) Single Speed was officially moving to the Wonder Bread Building and they were taking their caffeinated little brother along for the ride.
Wonder Bread 2016
I can't express what this project will mean to Waterloo and the Cedar Valley, but it's going to be huge. Yes it's going to be a great brewery and much needed local restaurant. But it's also going to be a regional destination (staycation) and a cultural and economic stimulator for the entire Cedar Valley. It might even help local companies lure young, discretionary income spending professionals to the valley, or better yet, keep our young, smart, talented, discretionary spending sons and daughters (spending your discretionary income, no doubt) in town for a few more years.
For Sidecar Coffee Roasters, it's an opportunity to expand and improve. Bursting at the seams in the old football helmet storage room of Iowa Sports Supply, we'll have the opportunity to grow into a bigger, better space and reach more coffee lovers in the Cedar Valley and beyond. In addition to an expanded roastery, we have just enough space to develop a tasting lab/cafe concept shop that willserve downtown Waterloo and help educate customers about the coffee they enjoy every day.
Better educated customers push me to improve what I do. This new, more functional space will allow Sidecar Coffee Roasters to become the local roaster the Cedar Valley deserves.
